Why Vegan? Ami @the_sunkissed_kitchen!!!

Hello foodies! Hope you are well and your week has been great so far.

As I already promised in our previous post, there will be some very influential bloggers talking through my pages about the benefits of going vegan.
I approached some of my favorite instagram vegans, and asked them for a small favor. They will, hopefully, help me show you how easy it is to change your food habits and why it’s a good experience for your body and soul. I am very happy to present to you today our first guest – Ami @the_sunkissed_kitchen!

Let’s proceed to the interview. Ohhh…. I am so excited! I am so happy that I can give you the chance of having a closer look at some of the most creative vegans on Instagram. Let’s do it!

When did you become vegan and what made you do it?
I went vegan when I was 18. I was watching my cats play & thought “how can I love these animals & eat others?” I started as a vegetarian, but then read about factory farming and within a few weeks made the switch to veganism.
How did this change you, physically and mentally?
My skin cleared up, I lost quite a bit of weight, and felt better overall. It was a long time ago, so hard to remember! Haha it also forced me to be creative with food, it was before the internet was popular, so I had to go to the library to get books and read about veganism.
Her advice to the people that want to try being vegan is:
Be kind to yourself, everyone makes mistakes in the beginning. Don’t focus on what you can’t have, and focus on all the amazing foods you can! Try not to fall into the trap of eating too much vegan junk food! 😊 Be creative & have fun with it!
 She was also kind enough to share a recipe with us, so you are the big winners today! You can try to make her pumpkin cake.
 1 & 3/4 cups pumpkin purée (I roast my own but you could use store bought in a pinch)

2/3 cup coconut yoghurt

2 tsp vanilla

2 tbsp chia seeds (mixed with 6 tbsp water)

3/4 cup birch xylitol

1/4 cup coconut sugar

2 tbsp melted coconut oil

2 cups gluten free flour

2 tsp baking powder (aluminium free)

1 tsp baking soda

1 tsp cinnamon

1 tsp nutmeg

1/4 tsp clove

1/4 tsp Himalayan pink salt

Method:

Preheat oven to 180*celcius & oil your pans

Combine pumpkin, coyo, vanilla, chia mix, both sugars and coconut oil in a large bowl & whist until smooth (ish)

Then: soft the rest of the ingredients over the top, then gently mix wet and dry ingredients together (but don’t overmix!)

Pour into pan/pans and cook for approx 30 mins (depending on pan size) they’re done when golden brown & a skewer comes out clean when you poke them! 😂😂

I glazed mine with some Coconut yoghurt mixed with e3 live blue majik powder, and dusted the rest with some coconut sugar + cinnamon 💙But you could top with your favourite icing (lemon would be delicious!)

I completely agree with everything she said, and I felt the same things myself. And about concentrating on the things that you can actually eat is much better than thinking about what you can’t eat. Thinking in a positive way will lead to a success, and you will discover a whole new world of taste and combinations.
