Today I decided to share with you one of the recipes from our eCookBook “25 Top Cakes”. It’s one of the most attractive cakes that I made. The idea was to have a brownie as a base and the fruit I wanted to use was red currants. And then I thought…. why just a regular brownie, when it can be made with white chocolate. It’s different and very interesting. The result was amazing. In the white “brownie” I also put some red currants so it stays moist and yummy.
For the white chocolate brownie base
. 200 g white chocolate
. 125 g butter
. vanilla essence
. 3 eggs
. 100 g all-purpose flour
. 50 g redcurrants
For the topping
. 200 g full fat cream cheese
. 150 ml double cream
. 50 g powdered sugar
. 100 g fresh redcurrants
. 50 g milk chocolate
1. Melt the white chocolate. together with the butter. You can do it in the microwave or you can melt it in a metal bowl placed
on top of a saucepan with simmering water. Remove from the heat and add the vanilla. Then you can start beating in the three
eggs, one at a time. At the end, mix in the flour and the redcurrants, and transfer the mixture into your cake tin. Bake in the
oven for 30 minutes at 180°.
2. Beat the cream cheese with the double cream and the powdered sugar. When the cake has cooled down, transfer the
mixture on top of the cake. Arrange fresh redcurrants around the edges of your cake and sprinkle with the chocolate.
All of the cakes in the book are easy and quick. They don’t take more than 30 minutes, except these that you have to bake, but their preparation takes less than 15 minutes, so it’s all fine. You don’t need to look for the products all over your area, you can easily find all of them in one shop. Going through the book you will learn the process of cake making and you will start feeling comfortable in doing your own cake bases and even inventing new toppings.
