The weekend is here and it’s the best time for snacks. You have a bit more time on your days off, so why don’t you prepare something special for you and your friends. I have always loved this coconut filled chocolate bars. Recently I wanted to have one… but it needed to be vegan. So I decided to do it by myself. It turned out to be great and so easy to do.

You only need 5 ingredients to do it and no fancy skills are involved in the process.

Choosing the right type of coconut can help you get the most possible health benefits. There isn’t any real nutritional difference between shredded coconut and flaked coconut — they’re both made by the same process, but flaked coconut comes as larger pieces. Choosing unsweetened coconut instead of sweetened coconut does make a difference, however. Unsweetened coconut has a lower water content, making it a more concentrated source of nutrients, and also contains a lot less unhealthy sugar.

An ounce of unsweetened dried coconut, sometimes called desiccated coconut, contains more than 4.5 grams of fiber, which is 18 percent of the daily value, while the same amount of sweetened dried coconut has less than 3 grams. Dietary fiber helps you feel full for longer, potentially making it easier to lose weight. It may also help limit your risk for high cholesterol, heart disease, certain types of cancer, and constipation and other digestive issues. Thanks !

I just couldn’t resist and I took a bite 🙂 The flavor was exactly as I wanted it to be. Knowing that it’s vegan made me so happy! I did it myself – another reason to love it.

Vegan Bounty Bars

Serves: 6
  • 1 cup unsweetened shredded coconut
  • 3 tbsp pure maple syrup
  • 2 tbsp coconut oil
  • ½ tsp vanilla extract
  • 100 gr vegan dark chocolate
  1. Process the first 4 ingredients in a food processor or a blender.
  2. Form the mixture into 6 patties and then let them stay in the fridge, for about 30 minutes, until they become firm
  3. Melt the dark chocolate and then start dipping in the patties so they get completely covered
  4. Put them back in the fridge, until the chocolate firms up


That’s how easy it is. You can also shape them into balls, and have vegan bounty bites as a result.
