Stuffed Zucchini with dried tomatoes, eggplant, baked peppers and chicken


To make this you need:

zucchini 300 gr

dried tomatoes 30 gr

eggplant 50 gr

baked peppers 50 gr

chicken meat 60 gr

parmesan cheese 10 gr

salt and pepper

And for the sauce:

sour cream

fresh parsley


In order to make good stuffed zucchini you first need to cut them in half, lenghtwise, and then season them with salt and pepper. Bake them in the oven for 15 minutes, untill they get soft. When they are ready, you spoon the soft part of the vegetable and leave two perfect boats. To make the stuffing, you first put the chicken in the pan and you wait for it to be almost ready and they you put the other products. When the stuffing is ready, you transfer it in the zucchini “boats”, sprinkle with some parmesan cheese and bake in the oven for 6-8 minutes untill the cheese is melted. For better smell and taste you can add some fresh basil leaves. Stuffed zucchini are good with sour cream and some fresh spices, in this case I am using parsley. You can substitute it with basil, thyme, coriander etc.
