CoverShe was happy to answer our interview questions and she deserved to be featured as our new Instafoodie of the week! (You can see all the others here)

Let’s move on to the interview.

Can you tell me a little bit about yourself?

My name is Nadja and I’m a 20 year old chocolate loving university student, violinist, and feminist from Sweden. I’ve been an ethical vegan for about a year now and it’s really one of the best decisions I’ve ever made; for the animals, for the planet, but also for my own health, mind and well-being.

When I first created my Instagram account I never realized it would grow so much, from being just a place where people connect, recipes are shared and inspiration is flowing. I’ve met so many amazing souls through this community, but I’ve also become a better friend of myself, starring to treat my body better after years of disordered eating, anxiety and depression.

What is your biggest dream?
My biggest dream is to simply live, both literally and figuratively. To allow myself to try new things and to trust my intuition. I found that once I dare to get out of my comfort zone and open my eyes (and heart), life becomes so much more enjoyable.
What is your greatest achievement?
My greatest achievement didn’t succeed overnight. Not even over a few. It takes a long time to overcome disorders eating, and the ghosts in my head are still coming back every now and then when I’m stressed or anxious. I think it’s important to let them do so, but to also remember that today, they’re not allowed to rule my life in any way.
What is your inspiration?
I get inspiration from all parts of life. From family members and friends to things that just sweeps by my eyes. One thing I’ve always loved doing is to find a cafe with big windows towards a busy pavement, order a large cappuccino and just sit down and watch people outside. It’s calming, but at the same time amazingly inspiring.
Where do you see yourself 5 years from now?
I don’t know at all where I would be in five years. Thinking about how much has happened in only two years from now, I couldn’t possibly predict what would happen next. It would be a dream to open a vegan cafe or to give out a vegan cookbook in the future. Actually, I’ve recently got the idea of combining my vegan cooking and my hobby scribbling and make an e-book, filled with deliciously sweet vegan recipes like fluffy ice creams, gooey cakes and wholesome bars, accompanied with small illustrations. That would be my current goal!

She truly deserves to be our Instafoodie of the week, and you will see why later on.
Let’s now move on to the interview.

Can you tell me a little bit about yourself?
“Don’t grow up, it’s a trap” That’s my motto, because I try to preserve the light heartedness of a child. Let’s say I’m way older than a child. I’ve lived my entire life in the German part of Switzerland. I live out my passion for a healthy but still playful kitchen whilst creating and planning my daily meals. Good food has always been a very important part of my life. My father has sharpened my awareness as a child in his allotment for the source of food. The weekly stroll over the farmers market during all the season is one of the biggest pleasures. Coming home and finding endless inspiration in my large collection of cookbooks, Instagram or over foodblogs makes my heart jump. The results are often photographed (and posted) right after and usually devoured with enjoyment.
What is your biggest dream?
Actually I’m very grateful with my current life. A dream would be to live on a little farm in California. To create a garden for self-sufficiency and perhaps to own a few sheep and goats on the property. With all the goodies I would create exiting new meals and maybe sell or swap the products.
What is your greatest achievement?
To reinvent myself. I have been to various professional fields but my heart beats definitely for visual design and trends analysis. My greatest achievements where my passion develop new concepts and therefore to exchange ideas with interesting people from different professions.
What is your inspiration?
To me the biggest source is probably mother nature. All the colors, textures and moods are incredible! Travelling is always giving me so many new ideas plus it’s so satisfying to learn from other cultures.
Where do you see yourself 5 years from now?
Planning in advance is less my peace of cake. More important to me is a balanced lifestyle and the awareness of consistent positive coexistence. Furthermore it often comes different than you think 😉

Let me now show you some of her work.

Salmon, baked in foil, with asparagus and tenderstem broccoli

Hello guys!

Today I have a quick and easy recipe for you. I don’t even have to give you quantities or special instructions.

Our meal today is baked salmon in aluminium foil with asparagus, tenderstem broccoli and lemon.

All you have to do is – set your oven to 200 C, and do exactly what you see on that picture.

DSC_0762As you can see, we have seasoned everything with some salt and pepper. You don’t need anything else. Close it nicely with another piece of foil and bake in the oven for about 20-25 minutes.

Salmon12Enjoy your meal with a glass of white wine.

Nice and easy, not too much to clean after that, and very healthy. Lots of benefits in this recipe.

Don’t forget to come back tomorrow, when you can see our new interview.

Bye bye food lovers.

Review of the Week – The Table Cafe

Hello guys! Today is the 1st of June already… Time goes by quickly.

The review I have prepared for you today is of The Table Cafe. You can find it on this address – 83 Southwark Street, London, SE1 0HX.

On my second attempt to visit this place, I finally got in. The first time it was very busy, with a big queue outside, and I couldn’t wait too much because I was in a rush. Now I know why they are so busy. Great attention to detail and great menu!

Let me show you what I had for breakfast.

The Stack – a towering inferno of deliciousness, with chorizo and ham-hock baked beans, toasted bagel, two poached eggs and hollandaise

The Table Cafe

Wow, guys…. IMMACULATE! Absolutely perfectly cooked and really satisfying. Just look at it – gorgeous. Presentation and execution – perfect! I don’t know what else to say.

It’s a thing that you must try.

I also had pancakes for dessert. Take a look.

Valhrona dark chocolate, mixed berries and vanilla yogurt…… it tastes as good as it sounds and looks!

Great performance by the chefs. Thank you very much guys, for paying so much attention to my plates!

It’s on a nice street, you can see The Shard from it. It’s near London Bridge, so you can stop by Borough Market after you have breakfast.

I am sure many of have already been there, because it’s a popular place, and for those of you who still haven’t – please go! You won’t regret that.

That’s it for today guys, see you later.
