Egg muffins with avocado

Today we are serving breakfast. Welcome to our table. What we have for you is egg muffins with prosciutto, Gouda cheese and cherry tomatoes with some avocado on the side. Great breakfast, burst of flavors and easy to make.

And the way it looks like….. it’s great!



It’s a smart and creative way of using your muffin tin.

First thing that you have to do is to spread some butter on your tin, so your food won’t stick. After that you have to place one nice slice of prosciutto in each hole. Then crack an egg inside. In each nest you can add one cherry tomato, cut in half. Season with a little bit of salt and pepper. Now you can sprinkle some Gouda cheese. Transfer your tin into the oven, set to 180 C, and bake for 10-15 minutes (depending on how cooked you like your eggs).

We like serving this on a bed of rocket and with some avocado and toast on the side. You can do whatever you want on your plate, it’s a matter of taste. It’s a great breakfast and it fills you up very fast.

We wanted to use our muffin tins for this purpose, long time ago, but we were always thinking about the perfect recipe. I believe that this is the one. Not only it’s attractive, but it’s ready in less than 20 minutes, and you can make big batches for more people.
