Crunchy carrot salad with avocado

Hello guys! I am sure that you are having a good day and I am happy that you are checking out my new recipe.

I had a long day at work…. it’s Saturday… and my kitchen is usually constantly busy on this day. Anyway, this won’t stop me from publishing a new post. At the end – it’s all about sharing good food with you guys.

I am on a mission, to show all of you that being vegan can be quite interesting. You can have a look at our new category – “Why Vegan?”. There you can find interviews with very famous instagrammers, that are helping me on my new journey.

Most of you, including me, were raised eating lots of meat and drinking lots of milk. Cheese was always present on our tables as well. That’s how our habits were created. For us it’s normal to consume all of these products and it’s really hard to give up on them, just because we can’t imagine our lives if we don’t see them in our plates. But after I read some information of how animal products are treated before coming to our fridges I decided to become vegan overnight. And it’s been a bit more than a month now. The way I feel can’t be easily explained but I will try. It doesn’t matter how much food I eat now, I always feel light after having it. There’s no more tiredness or stomach pain. When we eat meat and cheese for example, we fill up our bodies with more calories and less nutrients. This makes our body work harder to digest them, which logically makes us feel tired and heavy (because food stays longer in our stomach). With vegetables you will never feel that way. You can have as many as you want and in return you receive all the nutrients that you need and less calories which assures that you won’t gain any excess weight. I wanted to feel it myself so I can be sure about all of the benefits that I’ve been reading about. And it really works – eating vegan food helps our bodies and mind. We are made to eat that type of food and my mission is to show you that it’s not boring – it’s even more exciting discovering all of these new flavors. Nothing will happen to you if you just try it for 2-3 weeks – don’t be so skeptical!

That’s enough explanations for today, let me now show you the tasty salad.

Crunchy carrot salad with avocado

Ingredients
  • 2 big carrots
  • 100 gr cherry tomatoes
  • 100 gr sweetcorn
  • 1 ripe avocado
  • a handful of toasted pine nuts
  • 1 tbsp of black sesame seeds
Instructions
  1. In order to have the carrots like these on the picture, you need to use a peeler and be careful with your fingers
  2. Place the ready carrots into a bowl and top with all the other ingredients
  3. Season with balsamic vinegar, olive oil and salt

It’s super crunchy and different. My idea was to have the carrots like tagliatelle pasta, that’s why I used the peeler to shape them in a similar way. They make the salad look sexier. The toasted pine nuts add some extra crunch and exceptional taste. The cherry tomatoes are super sweet and they are very good friends with the avocado and the black sesame seeds.
