Today we have for you one very easy and delicious dish. It’s not heavy, it’s perfect for lunch or dinner and you can prepare it in 15 minutes. You just need to have chicken thighs, mozzarella, cherry tomatoes and of course salt and pepper and a bunch of fresh basil.
It’s really, really easy and fast.
First you season the chicken and then you start cooking it in the hot pan. When it’s been cooked for around 3-4 minutes, each side, transfer it into the oven, set to 230 C, and top the thighs with the mozzarella slices. Bake for about 4-5 minutes. Meanwhile, cut your tomatoes in half and sautee them in a very hot pan. Season them nicely with salt and pepper. Cook for 3 minutes and add the fresh basil. Remove from the heat. Now you can take your chicken out. Take a nice big pasta plate, and start by putting the tomatoes inside. Cover them with the chicken and finish with some freshly cracked black pepper.
The result is astonishing! This meal is so light, but it still fills up your tummy nicely. The combination is very successful.
