Beef meatballs with tomato sauce and baby potatoes

If you want to make a quick lunch for 2 people, and you have only 30 minutes to cook, what are you going to do? Of course there are many things, it’s not rocket science to create something new. Today I have for you one of my creations for a quick and delicious lunch. It’s beef meatballs with tomato sauce, garnished with some baked baby potatoes with fresh rosemary. They don’t just look awesome, they are very tasty.



The size of the meatballs is something that you have to decide for yourself. In my case I used small, slightly bigger than the baby potatoes, because don’t forget – you only have 30 minutes. The smaller the meatballs, the faster they cook. I used minced beef, mixed with some herbs and a little bit of onions. You can make the meatballs however you like. Use your favorite recipe. When they are ready, toss them in the pan and cook them halfway. Then add the tomato and basil sauce, you can buy it from every supermarket. Don’t forget again, that you are in a hurry, and you don’t have time to make your tomato sauce from scratch. The one that you can find in the shop is perfect for this recipe. Let the meatballs boil in the sauce, and reduce the heat. Cook for about 5-7 minutes. Meanwhile slice your baby potatoes in half and put them in the oven, set to 230 C, with some butter, olive oil, fresh rosemary, salt, black pepper and some water. If you are cooking for 2 people – 400 gr of potatoes will be enough. They will be ready in 30 minutes, because they are fresh baby potatoes. If you have a “grill” function on your oven, you can put it on for the last 5 minutes, so you can get the nice golden color. If not, just leave them bake more, it will be the same result. But try to save as much time as you can. And looks like that your lunch is ready. Make a nice circle with the potatoes around the plate and place the meatballs with the sauce in the middle. Enjoy!
