Hello guys! Happy Veganuary!

Being vegan for a month is definitely something that you should try – I am sure that many of you will decide to stay vegan for a bit longer.

We are here to help all of you that are still wondering what to eat, that doesn’t contain any animal products. People are constantly asking me what can they eat if they decide to go vegan. The thing that I always say is that it’s better to concentrate on the things that you can actually eat not on these that you can’t eat. This will set your focus into the right direction – and you will discover a new world. The world of vegetables, seeds, nuts, fruits, legumes etc. is so colorful and exciting. You can actually let your imagination fly and enjoy the new flavors that will become your best friends. Learning a new habit takes time, and every beginning is a bit bumpy. But after collecting enough past references for the food that you eat, you will know that every next one will be tastier.

Almost every one of your favorite recipes, can be turned vegan and enjoyed as much as the original one in your mind. You can still have brownies, gorgeous pasta, chocolate truffles, risotto and be super healthy!

Today we have prepared for you a quick, delicious, silky, magnificent, superb pea soup with harissa roasted cauliflower. Soooo simple!

Here’s the recipe.

A hot pea and cauliflower soup

  • 500 gr frozen garden peas
  • 100 gr cauliflower
  • 20 gr harissa paste
  • salt, pepper
  1. Boil the peas for about 10 minutes and blend until smooth
  2. Season with salt and pepper
  3. In a hot pan - start frying the cauliflower in some vegetable oil
  4. Cook for 5 minutes and add the harissa
  5. Mix nicely and take off the heat
  6. Serve the soup with the cauliflower on top
  7. Enjoy

The harissa roasted cauliflower is absolutely delicious. It reminds us of our roasted parsnip salad, that was served next to our grilled sweet potato steaks.

Eating cauliflower regularly is a simple way to get much-needed nutrients into your body. For instance, one serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

The good thing about vegan food is that every single product that you put in your food is beneficial for a lot of things at the same time. You also know what goes in your food and that’s quite important to be honest πŸ™‚
